The major point of this Better Call Saul episode is that everyone wants more. Jimmy wants more to his life than a mundane desk job. He is ready to quit, but not before he gets to keep his bonus. He's not sure how to do that until he gets inspiration from an inflatable advertising dummy. The colorful, out-there inflatable gives him the way out, but it is also a metaphor. Jimmy is colorful, he's loud, he's not a stickler for the rules. He is, in fact, the inflatable.
Jimmy gets out of his deal, but presents something "more" to Kim as well -- to go into private practice together. He knows it's a long shot, but hey, that's Jimmy.

Kim tells Jimmy no, but the concept lingers. Her meeting with the new firm brings home Jimmy's point and some repressed feelings in her.
She moved to New Mexico in order to have more. Like a lot of us, we strive, and fight, and toil, only to realize a bit late that were not actually happy doing what we worked so hard to achieve. Her slip of calling the new boss Howard, drives Jimmy's point. New boss really is just another Howard. She is replacing one with an exact replica of the other.
Standing on that roof, Kim decides she wants to honor her younger self's hopes and dreams of living a life larger than what she would have had in Kansas. She already has accomplished that, but not to the extent she dreamed of. She decides to take up Jimmy on his offer, sort of.
She won't enter the law firm with him, but share overhead costs. Is Jimmy happy about this?

His disappointment and the hurt are evident in his face. Great acting by Bob Odenkirk in this scene. He had just opened up to Kim about who he really was, who he wanted to be, and she doesn't accept him. That's tough.

Mike wants more too, he wants more for his family. He also wants to make sure that Tuco doesn't take more from his family than he already has. The threat is still there. He knows he must do something about it, but what it is, I have no idea.
The interesting thing to me is how the concept of wanting more effects all three of these characters. Each of them are going down a very bad path because of these desires to have more.
I can't wait to find out what happens with Kim and Jimmy eventually. I also can't wait to see how Mike winds up working for Gustavo.
